For even lower sodium chips, don't put salt on them.
I ate them all before I thought about making a thread about this - I should have taken pictures.
All you have to do is take a potato and cut it up into paper-thin slices (you can use a vegetable peeler). Lightly coat both sides of the slices with cooking oil and place them on a large greased/sprayed plate in a single layer. You will need to make this in several batches depending how big your potato is. Microwave for about 4-6 minutes, or golden brown and crispy. When done, take the chips off the plate, and gently pat them dry with a paper towel. Then put your chips into a bowl, throw in some salt and your favourite seasoning and toss until coated! I used chilli powder.
If you like your chips with a lot of salt and seasoning, toss them in seasoning when they are still warm (that means you'll need to toss them in between batches). The seasoning will adhere better. For lower-sodium chips, let them cool before tossing them in seasoning. The excess seasoning will just fall to the bottom of the bowl.
